Taste the Rainbow

I feel like y'all are getting the wrong impression of me. While I really enjoy attempting some things that are of crafty nature, I am not crafty. I did make these rainbow cupcakes to celebrate St. Patty's Day for Ella's class. Even cupcakes weren't an uneventful process. This idea and recipe came from Family Fun with a little prompting from Felicia.

I started with a white cake mix and followed the box directions (remember: egg whites only if you want a truly white cake).



Then I evenly seperated the batter into six bowls (about 3/4 c in each bowl)



and began coloring the six shades of the rainbow (the recipe was sweet enough to tell you exactly how many drops of each color you needed to make the different combinations)



Then I started layering these babies, beginning with purple (the bottom of the rainbow) all the way up to red.


I tried to make sure each layer was fully covered. What ended up happening was I had entirely too much cake batter in each cupcake. Like ifitanentirecakemixin12cupcakes too much. That's a lot, by the way. I smoothed out each color evenly with a spoon.

So I'm finished layering each color now. Yeah it wasn't that easy. It took a long time! If you've ever baked cupcakes before you can see in the picture below how incredibly full this cake pan is. You also know what's coming next.



Yes. HUGE cupcakes. Oh well. I bet the kids liked them (and the moms hated me). But I went ahead and plopped a "cloud" of icing on top.




I had just enough for each student so I wasn't able to cut in and see the layers really well, but I can still kind of tell from the outside. And I'm ok with that.

And you know what? If I'm being really honest I got to see the insides anyway. Because I searched my kitchen high and low for my nifty little cupcake holder with individual grooves to no avail. I ended up just sticking these all-too-time-consuming cupcakes in an aluminum pan and going. Which worked great until...

I put them in the car.

We headed off to school the next morning, took the very first turn, and I heard every.single.cupcake slide and tip in the back of my car. "Uh-oh! That's my cupcakes!" Ella said.

No sweetie. "Those are my cupcakes!!!!" I thought to myself.

By the time we arrived at school every single one of those tediously prepared cupcakes was tilted, turned, flipped, and destroyed in their presentation factor. Some were broken (hence my getting to see the inside). What did I do? Well, I just peeled back that aluminum foil, flipped all those babies back over, plopped the icing back on top (with my hands), pieced them back together, and covered 'em back up.

Then I wiped my hands off, unbuckled my girl, and walked into school with a smile on my face. What was the first thing her teacher said when I handed them over?

"Thanks so much, but I hate that you went to so much trouble for these."

"They had a little accident in the car, but I hope the kids enjoy them anyway," I replied "and you're very welcome. It was no problem at all."

Then I turned around and left without a single word.

OMG!!!! I have NEVER laughed so hard at a post in my life! :)) Ok..first..the cell phone pic did NOT do them justice..they actually turned out WAY prettier than mine! I like how big they got on top! And they were definitely better rainbows than mine. Second I could not get the dollop on top right then I saw on I am Baker site she did circles..is that what you did? I did stars and sprinkles b/c I couldn't do it. AND...3rd poor Ella worrying over her cupcakes! Have we rubbed off on her already! and 4th..you have the most adorable sense of humor ever! :) and 5th..YOU ARE CRAFTY! Think back to gingerbread house boxes people! :) love ya!
